Overview
At Fairfield by Marriott, St. John’s Newfoundland, we believe every guest interaction, from morning breakfast to a grand banquet, should be seamless and memorable. We are looking for a Food & Beverage Supervisor (salaried) to join our team.
In this hands-on, salaried role, you will be the lead to our F&B team, with a primary focus on our Banquet functions and daily Breakfast operations. You are a leader who is just as comfortable on the line as you are on the floor – someone with culinary experience who can jump in to cook, plate, or problem-solve, while also motivating the team to deliver exceptional service.
What You’ll Do
Operational Leadership & Service
- Supervise the day-to-day operations of Banquet functions and the Breakfast services, ensuring setup, service, and tear-down meet brand standards.
- Lead by example on the floor, assisting with food preparation, plating, and service during peak periods, leveraging your culinary skills.
- Conduct pre-shift meetings to align the team on event orders, menu changes, and guest expectations.
- Ensure all banquet events are executed per the Banquet Event Order (BEO), communicating seamlessly with the culinary and sales teams.
Team Support & Development
- Assist in the training and onboarding of new hourly associates, focusing on service standards, food safety, and operational efficiency.
- Provide real-time coaching and feedback to team members to maintain high performance and morale.
- Support the Guest Services Operations Manager in scheduling, payroll, and inventory tasks to ensure labor is managed effectively.
Culinary & Quality Assurance
- Monitor food presentation and quality for breakfast and banquets, stepping in to prepare or plate items as needed to ensure consistency.
- Assist with opening and closing kitchen duties, including basic food preparation, stocking, and rotation of perishable items.
- Conduct line checks to ensure compliance with food safety, sanitation, and health regulations.
Guest Experience
- Proactively engage with guests during breakfast and banquet services to ensure satisfaction and address any concerns immediately.
- Respond to last-minute changes or special requests with a solutions-oriented mindset.
- Uphold Marriott’s brand standards for service excellence in all guest interactions.
Administration & Compliance
- Conduct the regular food order with suppliers owning the food cost control.
- Maintain accurate records of banquet attendance, final guarantees, and any discrepancies.
- Ensure all associates have valid certifications (ProServe, Food Safety) and adhere to hotel policies.
- Support the setup and maintenance of point-of-sale systems for banquet and breakfast functions.
- Conduct quarterly food cost and menu audit.
- Perform other duties as assigned by F&B leadership.
What You Bring
- Culinary Experience: A background in cooking or kitchen operations is essential. You understand the pace of a kitchen and can confidently prepare food to standard.
- Hospitality Education: Post-secondary education in Hospitality, Culinary Arts, or a related field is preferred.
- Leadership Potential: 3–5 years of experience in a food and beverage environment, with 2-3 years of supervisory or lead-hand experience.
- Certifications: Valid ProServe (Newfoundland equivalent) and Food Safety certification required. Serve Responsible NL as an asset.
- Operational Know-How: Familiarity with banquet setups, breakfast buffets, and high-volume service.
- Communication Skills: Ability to direct a team clearly and professionally while maintaining positive relationships with guests and peers.
- Flexibility: Comfortable working mornings, evenings, weekends, and holidays based on event and business needs. Working hours can range week by week.
- Physical Stamina: Ability to stand, walk, and lift for extended periods in a fast-paced environment.
- Union Relations: Union Knowledge is a bonus but not requested.
Working Conditions
- Fast-paced environment combining front-of-house guest interaction and back-of-house culinary tasks.
- Regular standing, walking, bending, and lifting (up to 25 kg / 55 lbs).
- Schedule varies based on banquet functions and breakfast service, including early mornings, evenings, weekends, and holidays.
